Feeding a family can be hard but feeding your babies can sometimes be even harder. I’m a firm believer that your kids should eat what the entire family is eating. I don’t believe in making food especially for kids/babies with some exceptions of course!! I often feed Kate the same things over and over but I feel like some days she’s getting bored of the good old scrambled eggs so here’s a creative way to make your kids eat their eggs, veggies and some dairy too!
Rob and I ate the same breakfast with two eggs in the recipe instead of one. It’s so good with a side of avocados!
(Makes 3) Ingredients:
1 medium zucchini, shredded
1 eggs, beaten
1/8 cup cheddar cheese, shredded
2 tbsps potato starch (you can also use regular flour)
Salt and pepper to taste
1/2 tbsp coconut oil
Note: sprinkle a bit of salt onto the shredded zucchini in a bowl, massage it a bit then squeeze the water out with your hand over the sink or use a piece of cloth before mixing in the rest of the ingredients.
Directions:
In a medium mixing bowl, add all of the ingredients in and mix well.
In a medium frying pan over medium heat, add coconut oil. Once the oil is hot, scoop and divide the mixture into three equal size fritters.
Fry for about 2-3 minutes per side.
